MEMELAS

The memelas are not unique of Oaxaca but Larousse Cocina said that the ones from Oaxaca are smaller.

The name memela comes from náhuatl tlaxcalmimilli that means large tortilla, usually the memelas are large tortillas and also fatter than normal tortillas, asiento is aggregated to and also beans, cheese or oaxacan cheese and if you want, hot sauce.

You can eat memelas in restaurants, markets of Oaxaca, and food stals.

TACOS

In all Mexico you will find these delights, there are a lot of types and also of a lot of sizes depending of the meat and the tortilla used, almost always they are served with smaller tortillas but with the same consistency, this tortillas are called tortillas taqueras.

In Oaxaca you can find tacos of chile relleno, pastor, tasajo, tasajo with quesollo, chicken, and other types that you can eat in taco stalls and other food stalls.

EMPANADAS

I couldn´t say good bye without mentioning the delicious empanadas of amarillito, this empanadas are made by hand in a comal, they are made with an oval tortilla that is heated and filled with amarillito mole, this is a oaxacan mole that has a yellow tone, that is why the tortillas take an orange tone in the cooking.

You can eat this delight in the Oaxacan markets and in some towns.
