WHAT THE TLAYUDA IS?

The name comes from náhuatl tlao-li, that means husked corn.

The tlayuda is a kind of tortilla and a dish, both very related because the tlayuda is the tortilla were the other ingredients are put, but this is not a common tortilla, it has a bigger size (about 30 cm) and it has different consistence, it is harder but it is not a tostada.

The tlayuda referring to the tortilla is made of a dough of withe corn, that is cooked in a comal.

WHEN DID IT ARISE?

Historians do not have its origin clear, but since the pre-hispanic epoch, corn was used to to tamales and tortillas, but with the arrival of the Spanish people more ingredients were introduced, like chicharrón, thanks to the arrival of new animals and products.

WHAT ARE THE INGREDIENTS OF THE TLAYUDA?

The base is the tlayuda (tortilla), this gets hot on a comal and then the asiento it is put, after that the beans go, the queso and/or quesillo, vegetables in which usually are the lettuce, radish, tomato, columna, avocado, and also they can put meat, it can be some or only one, in the most famous ones are the chorizo and tasajo, and to give it a final and unique touch you can put grasshoppers.

The dish would be finished like that, but in Oaxaca, sauces are not going to lack, so put some if you like it.

It is considered like that by the gastronomic encyclopedia of Larousse, me and probably a lot more can considere it a meal, because it is a very complete dish, and accompanied with some rice or soup you will be more than satisfied, even the tlayuda can be shared among several people because of its large size.
